500gm shell pasta; tsp olive grease; 500gm chicken, cut in lengthwise pieces; 2 tsp Cajun seasoning; 1 big onion, pieced; 1 big green capsicum, sliced; 250gm mushrooms, sliced; ½ tsp salt; ¼ cup cream; 2 average tomatoes, cut up; 1 cup basil leaves, sliced.
1. Cook the pasta according to the directions on the packet. Drain pasta, reserving ½ cup pasta cooking water. In a sauté pan, heat 2tsp grease over average-high heat waiting warm. Add chicken and Cajun flavor. Mixing is warm. Move to a plate.
2. In similar frying pan, heat residual grease. Add onion and capsicum; cook, covered, 10 minutes or waiting vegetables are warm and browned, stirring occasionally. Add mushrooms and salt; cook, enclosed, for 5 minutes, stirring occasionally.
3. Return pasta to the cooking pot. Add reserved cooking water and cream; fetch to simmer. Mix in onion blender. Heat through. Take away pot from hot; add the tomato, basil and chicken; toss to blend fine.
